I was able to find shio koji at our neighborhood Uwajimaya market in the refrigerated section next to the miso. I cut a side of salmon into thin fillets (skin on) and followed your instructions for marinating the fish overnight. After wiping off the shio koji, I pan fried the fillets on parchment paper for 2 minutes on each side over medium heat until it was slightly charred and the skin was crispy. I was really surprised at how tasty it was with only the shio koji as seasoning. It tasted just like the salmon that is served at our favorite Japanese restaurants. I will definitely be making it again. I used the remaining shio koji to make your karaage recipe and it also turned out very tasty. Thank you so much for the delicious recipes! I will always be a big JOC fan!5 stars
